Carrot Cookies – Marcia
¾ cup shortening
¾ cup sugar
1 egg
1 tsp vanilla
1 cup mashed cooked carrots
2 cups flour
2 tsp baking powder
½ tsp salt
1 cup coconut
Cream shortening and sugar together then add the rest of the ingredients. Bake at 350* for 10 minutes on greased sheet. For tea cookies make small and ice with orange icing. Makes 3 dozen.
